Raw tomato pasta sauce.

The tomato gods were good to me this year! All of my vines (16 varieties) are still producing ripe tomatoes every day and seeing as the tomato is in my top 5 favorite foods, I’m in absolute heaven. I’ve also been able to experiment a lot with this bounty and making a raw sauce was on the list. It’s super easy and tastes like pure magic. It really retains that unadulterated garden tomato flavor which you may not get in a cooked sauce. I use angel hair spaghetti but any pasta you have on hand will work.

Serves 2, Prep 5 mins, Cook 1 min + pasta cooking time

Ingredients

1lb medium sized tomatoes

3 Tbs olive oil

1 clove garlic, roughly chopped

5 fresh basil leaves, chopped

10 fresh oregano leaves or 1/2 tsp dried oregano

1 tsp sugar

Salt & pepper

2 portions pasta

1/ Fill a large pot with water and bring to a boil. Cut crosses into the bottoms of all the tomatoes and drop into the boiling water for about 1 minute or till you see the skin starting to peel up. Use a slotted spoon the remove tomatoes from boiling water and transfer to chopping board. Let cool slightly then peel, discard skins and roughly chop tomatoes.

2/ Put tomatoes, olive oil, garlic, basil, oregano, sugar, and salt & pepper to taste into a food processor or blender and blend till semi smooth. (*I use a high sided container and immersion blender to blend.) Cover and let sit for 20 minutes on the counter.

3/ Meanwhile, cook the pasta according to package instructions and drain. Toss hot pasta in the raw tomato sauce and serve immediately with Parmesan and more chopped tomatoes and basil.
