Healthyish Wholegrain Apple Streusel Muffins

Makes 12, Prep 10 mins, Cook 18 mins

INGREDIENTS:

1 c. (150g)Wholegrain flour

1 c. (150g) All purpose flour

1/4 c. (45g) brown sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

2 eggs

3/4 c. (190g) greek yogurt

3/4 c. (170) milk

2 Tbsp unsalted butter, melted

1 tsp cinnamon

1/2 tsp nutmeg

1 c. (about 2 regular sized apples) granny smith apple, peeled, cored and chopped small

FOR THE STREUSEL TOPPING

4 Tbps flour

4 Tbsp brown sugar

1/2 tsp ground ginger

1/2 tsp cinnamon

2 Tbsp melted butter

1/ Preheat oven to 400f/200c. Prepare a 12 count muffin tin with greased cupcake papers. Mix the dry ingredients (the first 6 listed) together and set aside. In a separate bowl, whisk together the remaining muffin ingredients (excluding the streusel topping) till well combined and set aside.

2/ Make the streusel topping by mixing all streusel ingredients in a small bowl till it’s a crumbly texture. Set aside.

3/ Mix the wet mixture into the dry mixture till just moistened. Do not over-mix. Spoon into the cupcake papers one spoonful at a time till evenly distributed. Top with streusel topping and gently pat the topping down. Bake for 18 minutes or till golden brown. Let cool for 15 minutes before serving or papers will stick to the muffins. Enjoy!
