The TJ taco

The ingredients are probably going to sound a little whack but TRUST, once you try these tacos you’ll add them to your dinner rotation stat.

They’re healthy, short ingredient list, and make a complete dinner with no sides needed.

I learned this recipe from a guy doing the samples at Trader Joes in Santa Monica a million years ago. All the ingredients needed were on offer so I think he just threw them together and the result was a revelation. My sister Chelsea and I were totally suspicious when he handed us the Frankenstein sample but we fell in love instantly and have been making them ever since!

I wish I could give the sample guy credit but we never saw him again…did he even exist?? Was he some kind of taco angel from heaven? I guess I’ll name them the TJ taco in his honor.

Serves 2 as complete meal

Ingredients

1 Tbsp any neutral oil (I used avocado)

1 brown onion, chopped

1 pack ground lean turkey

1/2 tsp garlic powder

1 Tbsp soy sauce

2 c. Frozen peas

1 c. Shredded cheese (pepper jack is best but cheddar or mozzarella work fine too.)

Serve with

Corn tortillas (corn are best but can use flour if not available)

Green salsa (I use a tomatillo and green chilli one. The green Tabasco is good too!)

1/ Warm the tortillas briefly in the microwave, cover and set aside. In a large skillet, heat the oil on medium high. Sauté onion till soft, about 3 minutes. Add the turkey and cook till no pink shows, breaking it down with a spatula as it cooks. It will cook quickly!

2/ Add the garlic powder, soy sauce and 1/4 cup of water till well mixed. Stir in the peas and cook another 3-5 minutes.

3/ Turn heat down to low and scatter the cheese on top. Allow cheese to melt, don’t stir. Turn off heat and serve immediately by spooning mixture into warm tortillas and top with green salsa.
